Soup of the Week! Yeah - both kids liked it!

If your children are anything like mine, dinner time is always hit and miss with them. Often, if one of them likes it, the other dislikes it and then sometimes they both don't like it. Like all mums, you just keep on cooking and hope one day they will enjoy your cooking AND appreciate ALL the effort you put in & in the back of your mind wonder if this will ever happen.

So when they finally enjoy and eat something you make you feel so happy, so i wanted to share this recipe with you that both our girls liked this week - yeah, hi fives all round! If my fussy girls liked it, i'm sure your kids will enjoy it too. It's a soup full of veggies and protein (red lentils) - bonus. I actually separated the batch once it was cooked and made a kid version and a mum and dad version (see below)

Here it is:

Mumma's Home Made Soup

  • Pumpkin - 1kg
  • 1/2 a large Sweet Potato
  • 1 x Potato
  • 2 x Carrots
  • 1 x Zucchini
  • 1 x onion
  • 3 x crushed garlic cloves
  • 1 x small bunch Broccoli
  • Red Lentils (dried ones - 250G)
  • 1 tablespoon of sour cream
  • Water (no stock required)

  1. Chop up all veggies, wash the red lentils and place in a big pot
  2. Cover with water (enough water to cover the veggies and red lentils)
  3. Bring to boil and cook until all veggies are soft (approx 20-25mins)
  4. Transfer to blender, add the sour cream into blender and blend to all smooth
  5. Serve with toast

*For the mum and dad version i separated the batch before blending and added 1 teaspoon of curry powder and 1/2 teaspoon of cumin seeds ground to the batch.

I hope you kids enjoy just as much as my little ones did, have a great weekend! HAPPY FRIDAY
