Kim Kardashian is heading to Australia - this September!

Its true, Kim Kardashian is visiting Australia in about two weeks time! She will be coming to Sydney, Westfield to promote her Kardashian Kollection fashion lines. Its been reported on news.com.au that she is so excited to be coming to Sydney and she stated that "It’s been incredible to watch our brand grow over the years and I love seeing how Australian women work our collection into their looks."

Fans will get their chance to meet Kim at Westfield shopping centre - Parramatta at 2.30pm in the mall on Saturday 13th September. In traditional style Kim will greet fans and sign photos for the first 200 shoppers in-line, that have made a Kardashian Kollection purchase from any one of their stockists between Tuesday, 26th August and Saturday, 13th September.

Salmon cooked to perfection!

I just had to share this amazing salmon meal i cooked the other night for the family, it tasted so yummy!

  • Salmon Fillet (one per person)
  • Fresh Lemon Juice
  • 1 tablespoon Soy Sauce
  • 1 tablespoon Fresh Ginger (finely grated)
  • 1 tablespoon Fresh Coriander (finely chopped)
  • Buk Choy - small bunch
  • Rice

  1. Preheat oven to 180 degrees c.
  2. You will need to roll out enough foil to wrap each piece of salmon individually i.e 1 piece of foil per salmon piece.
  3. Place salmon on foil then add a splash of lemon juice & soya sauce - just enough to cover the entire salmon piece.
  4. Place the ginger and coriander on the top of the salmon fillet.
  5. Wrap the salmon fillet up in the foil.
  6. Cook for 15-20mins.
  7. Steam Buk Choy & Cook Rice
  8. Serve salmon on a bed of rice with the Buk Choy.

I hope you enjoy it as much as we did.

Love,

Rachel

Soup of the Week! Yeah - both kids liked it!

If your children are anything like mine, dinner time is always hit and miss with them. Often, if one of them likes it, the other dislikes it and then sometimes they both don't like it. Like all mums, you just keep on cooking and hope one day they will enjoy your cooking AND appreciate ALL the effort you put in & in the back of your mind wonder if this will ever happen.

So when they finally enjoy and eat something you make you feel so happy, so i wanted to share this recipe with you that both our girls liked this week - yeah, hi fives all round! If my fussy girls liked it, i'm sure your kids will enjoy it too. It's a soup full of veggies and protein (red lentils) - bonus. I actually separated the batch once it was cooked and made a kid version and a mum and dad version (see below)

Here it is:

Mumma's Home Made Soup

  • Pumpkin - 1kg
  • 1/2 a large Sweet Potato
  • 1 x Potato
  • 2 x Carrots
  • 1 x Zucchini
  • 1 x onion
  • 3 x crushed garlic cloves
  • 1 x small bunch Broccoli
  • Red Lentils (dried ones - 250G)
  • 1 tablespoon of sour cream
  • Water (no stock required)

Directions

  1. Chop up all veggies, wash the red lentils and place in a big pot
  2. Cover with water (enough water to cover the veggies and red lentils)
  3. Bring to boil and cook until all veggies are soft (approx 20-25mins)
  4. Transfer to blender, add the sour cream into blender and blend to all smooth
  5. Serve with toast

*For the mum and dad version i separated the batch before blending and added 1 teaspoon of curry powder and 1/2 teaspoon of cumin seeds ground to the batch.

I hope you kids enjoy just as much as my little ones did, have a great weekend! HAPPY FRIDAY
